Episode spoilers: So did the Mountain die at the end?  Oberyn did get him pretty good beforehand, and he did kind of collapse right at the end.
Well they declared the Mountain the winner, so that should answer that question. As for the books...the Mountain does survive for a while but succumbs to the poison from Oberyn's spear which was very painful and slow.

Maybe they just don't feel like spending the money on it.

Loved the fight, but the episode's highlight was Sophie Turner's acting. And Sophie Tuner in that dress later on. And the potential story ramifications of Sansa being out in the open at the Eyrie.

This is one of the cases where the show has improved on the books. I think in general the show has handled the female characters better than the books.

I'm curious where they go with the next seasons. The producers want to finish the series with seven seasons. As of this weekend they will have wrapped up 4 seasons which will cover the first 3 books and maybe about 1/4 of the fourth and fifth books (which run concurrently). GRR Martin has yet to finish and publish the 6th and 7th books, but the way things look by this time next year they will have finished with most (if not all) of the book material. Unless they choose to drag it out ala "The Hobbit" and just start adding useless padding. I'm ok with the show going past what has been released, assuming that it is all based on outlines from Martin. They shouldn't wait for his glacial pace of releasing books.
