John Quincy Adams served in the House after his presidency and argued the Amistad case before the Supreme Court.  Andrew Johnson served a year or two before his death in the Senate.  I'm not really sure if either of those qualify as "very public" (especially Johnson), but that's more than most former presidents do.

IIRC, Hoover did a lot of stuff post-presidency, but, again, I'm not sure if much of it was high profile.  Maybe the stuff he did with the Boys and Girls Clubs of America?

I can't think of any former presidents who fit into the TR/Carter/Clinton mold.

You forget Taft. Hard to be much more public than the Chief Justice.

     JQA & Taft are the major ones that come to mind seeing as they actually held public office afterwards. Don't really know about any others.
