Watching Natural Born Killers, I feel like its neo-psychedelic pornoviolence would have been considered hipsterish. I think of Ministry and Poppy Z. Brite and Hellraiser.

And then I think: why is everything so much more bland today?

The hipster subculture became commercialized in the last decade. That may or may not be to blame for its current blandness, but I hate it when alternative subcultures go mainstream, so I'll go ahead and blame it anyway.

Definitely the Guess brand - watches, clothes, backpacks, etc. If I'm not mistaken, it was mainly late 1980s through about the mid 1990s that that brand was massively hipsterish.
