Obviously Canada would be great, since it's a country that I'm familiar with. India would also be very interesting, although probably unmanageably large.

Canada, Australia, UK (in that order).

Not so hard for Canada with the poll maps already out there, slightly harder for Australia, with booths where anyone can vote, rather than specific boundaries within electorates, and probably harder still for the UK, where I believe all votes are counted collectively at a central location.
