To be precise, it's 196 if you count Taiwan, Kosovo and the Vatican.
We've got 193 member states and one observer state (Vatican) in the UN. So 194 is the current base number for universally recognized states in the world.
You may add some of the "disputed" states to that number. Your mileage may vary though. For instance, the number of states who recognize Western Sahara as a nation exceeds the number of states recognizing Taiwan by far. In practice, Western Sahara is merely a government-in-exile without much control over anything, while Taiwan bears most features of an actual independent country.
