What if Truman's offer was accepted, and Eisenhower ran and put Truman as his running-mate?

The other parties (State's Rights and Progressive) stay the same.

I find it rather hard to believe that a sitting President would actually accept the Vice Presidential nomination.  Although in the diary, I would question whether Truman was being serious or sincere in this entry relating to this matter. 

The only thing wrong with an Eisenhower/Truman ticket would be Truman.

However, I believe it is safe to assume that since Truman defeated Dewey in 1948, that Eisenhower most certainly would have done so, adding to Truman's actual electoral vote count.

Eisenhower was uncommonly popular amongst the American public of that era, and it would have been almost impossible for anyone to have defeated him in a Presidential election at that time.

An interesting election in 1948 would have been Eisenhower being drafted by the Republicans and running against Truman.  Although Truman defeated Dewey, I doubt very much that Truman would have defeated Eisenhower in 1948.

What's more interesting is the possibility that Democratic leaders could get Eisenhower to run as a Democrat in 1948. He would probably beat Truman at the convention. The following is a possible list of alternate Presidents with Eisenhower winning in 1948

Dwight Eisenhower/Rob Kerr: 1949-1957
Richard Nixon/John Bricker: 1957-1961
Stuart Symington/John Kennedy: 1961-1965
Nelson Rockefeller/Roman Hruska: 1965-1973
John Kennedy/Terry Sanford: 1973-1981
Lloyd Bentsen/Walter Mondale: 1981-1985
George Bush/Bob Dole: 1985-1993
Doug Wilder/Dick Gephardt: 1993-2001
Tom Ridge/Caroll Campbell (Fred Thomspon): 2001-2009
Colin Powell/Mitt Romney: 2009-Present

If Truman managed to beat Dewey in 1948, then surely as a war hero Eisenhower would win by an even larger margin.
