Not typically; but sometimes I will if I think it would significantly improve the rhythm of a sentence.

For the record,

Example of a restrictive clause:
   The book that [or which] Bob Smith wrote was extremely boring.

Example of a non-restrictive clause:
   The book, which Bob Smith wrote, was extremely boring.

I just use both to avoid using one twice, such as "The book which Bob wrote that only he managed to read cover to cover was extremely boring."  I usually use which first, and then that. I have no idea if what I am doing is right or wrong

Microsoft word spell check taught me to use which with a comma and that without a comma. And that's what I do.

I usually just say "that."
Now that I work for a newspaper, the copy editors really hate me for using "that" where it doesn't need to be.
