Mathias.  Simply because he was witness to the very first ecclesiastical dice game in human history.  Two thousand years later and it's Bingo every Wednesday in the Parish Hall.  Who knew?

On a serious note, St. Barnabas.  If you consider him an apostle.  Though I do love St. Paul, whom I believe is terribly misread by liberals and conservatives.

I identify with Peter, a little quick tempered and sometimes a failure when my feet is put to the fire.

He's a fisherman as well, which is always cool. Jesus must have been the ultimate fishing buddy...you'd never have to go on a beer run....
