I love cheese! My favorite is a good, sharp one, not too hard but not too creamy either. That said, I'll eat and enjoy most cheeses, with the exception of blue cheese which is disgusting.

I like cheese a lot and couldn't list a particular favorite.

Maybe a ripe Saint-Maur? Or the milder (mildest) members of the Rotschimmel family (of which Limburger is one of the strongest), a Weinkäse say? Or a Manchego? Or a quality, part-sheep part-goat Feta? Hmmm... so many possibilities...

One of my favorite meals is sliced fresh mozzarella with sliced ripe tomatoes, basil, salt, pepper, and olive oil and good balsamic vinegar (the older the better... I bought some stuff that was aged 15 years.. it's soooo frickin good).

But I love to just break chunks off of a parmesan cheese block and eat it plain.  And while I love blue cheese on just about anything.. I won't go to the extremes that my brother will and just eat blue cheese crumbles with a fork.

Another great use for cheese:  Use milk instead of water in your campbells tomato soup and add a slice of American processed cheese food... it makes it delicious.

You know what I like to do... fry up some bacon for some bacon cheeseburgers.  Cut up some sharp cheddar for the cheeseburgers - dip a few extra pieces in the excess bacon grease (it has to be HOT though) - it's fantastic - cheese with a bit of a bacon flavor with it.

... and now I want some, but I have neither bacon nor cheese at home (somebody ate my wheel of gouda - which reminds me... I've been trying to think of a way to make a gouda cheeseburger - any good ideas on what to add to make it good?  Maybe mushrooms?).

I like all cheeses.  I prefer to snack on the fancy sharp flavored stuff (bleu, cheddar, etc.), but


But melted, nothing beats good ol American and mozzarella.
