I'll try to nominate people who haven't been yet, even though they're not my first choices.

1st Century: Jesus of Nazareth
2nd Century:
3rd Century:
4th Century: Fritigern
5th Century:

8th Century: Charles Martel (Time magazine would readily buy into the "Battle of Tours saved Europe from Islamic conquest" argument)
9th Century: Saints Cyril and Methodius
10th Century:
11th Century:
12th Century: Saladin or Urban II, depending on whether you think it's more significant that the crusades happened or that they failed
13th Century:
14th Century: Osman I, or Louis the Great of Hungary was pretty cool
15th Century: Christopher Columbus
16th Century: Hernan Cortes or Nicolaus Copernicus (or "The Explorers (of land and science)!")
17th Century: Cardinal Richelieu or Ferdinand III
18th Century: Voltaire
19th Century: "Liberalism" or "The Industrial Revolution" if we were doing it Time magazine style
20th Century: Gavrilo Princip
