If you know that you can't have it, then I think the mechanism is to just put it out of your mind and do other stuff. Keep occupied with other things. Eventually it goes away.

That's not necessarily easy though, I'll grant you that. Being around other people usually helps though.

This, according to early Buddhists, is the first possible outcome of any desire.  The second is getting something you desire, but then losing it.  The third is getting something you desire, being happy with it for a while, and then getting bored with it, prompting you only to find another object of desire to pursue.  This is why the Buddhists think living life as a pursuer of desires can never lead to lasting contentment.
