Lloyd Bentsen.  Realistically he should have been at the head of the ticket in '88.  And frankly, he was a genius as Secretary of the Treasury.

I chose Lieberman, but it was very hard to decide between him and Bentsen. Edmund Muskie came a close third as well.
Jack Kepm would be the best republican among that group.

Sarge Shriver was Director of the Peace Corps.

He was also the ambassador to France between 1968 and 1970.  I don't actually know what he was doing during the 1972 election though.
