What particular appeal fdidnHaillary have over Obama to Hispanics that would cause her to win them by a 2-1 margin? They were one of her biggest blocs, and there doesn't seem to be any obvious reason for that, unlike, say, women or Appalchian whites.

Because obamacare, which was started by Hilary expands medicaid coverage. Plus, Latinos allegience towards Bill due the economic expansion under his watch

I do remember a lot of people saying that Hispanics and Blacks have a lot of racial tensions between them, especially in  big cities like LA, NY, and Chicago. They said that this would mean that Hispanics would not flock to Obama in the general election like other minorities would. That proved to be wrong, but maybe it did play a factor in the primary.

A lot of hispanics liked Obama in 2008 obviously because he was a minority and they could identify with it.

However a lot of hispanics did very well in the Bill Clinton years in the 90's compared to OTHER years And voting for Hillary was a thank you towards Bill, more than anything else.
