What with the wine and everything? I've read that they pretended Jesus didn't like wine, but did they just go all 1984 and be like "Jesus is at war with wine. Jesus has always been at war with wine"?

There were religious exemptions for sacramental wine during prohibition.  Of course some "sacremental" wine did find itself diverted into secular purposes as one might expect, but not as much as one might think.  And of course this was in an era in the Latin rite Catholic Church where only the priests actually got the wine, so it was Lutherans, Anglicans, and Eastern rite churches and so forth that had a means to encourage attendance.
