Why was Delaware classified as a "middle colony" but is today considered part of the South?

Same reason New York was a middle colony but ended up part of the North.  After the end of the revolutionary era (and basically around 1810s), the distinction between New England, Middle Colony, Southern Colony faded and was replaced by 'slave state or free state."

I agree, but he may be referring to how the census designates Delaware, or how it was one of those border states that had slavery and supported Breckenridge.

What would you consider "North", "South" and "Middle" today and why? Does the distinction only mean things until the Appalachian Divide, The Mississippi, the 100th parallel or can western states be categorized too?

North, probably New England, upper Hudson valley.  Midatlantic has the rest of New York, plus New York City suburbs, Pennsylvania, NJ, parts of Maryland, Northern Virginia.  South has everything south of there, minus southern Florida.  This might only extend as far as the Mississippi River.

Delaware's three counties were originally the three southern counties of Pennsylvania, but they seceded when Pennsylvania was going to ban slavery--therefore, Pennsylvania was a northern/"free" state while Delaware was considered a southern/"slave" state.

I disagree.  Its part of the Mid-Atlantic.
The Mid Atlantic is part of the Northeast. The Northeast consists of the Mid-Atlantic and New England.

I was quite surprised when I learned that the U.S. Census Bureau includes Delaware with The South.

Some time ago there was an idea to move it into the Northeast. It was rejected for consistency's sake.

With slavery it WAS south, but now it IS a left state like  MD, thus NE. Even VA is shifting away from the south!

There's more to a region than who it supports in presidential elections.

The (black) servants of my Quaker relatives in Penn. would eat at the table. The servants of my Quaker relatives in Delaware would eat in the kitchen. (This is in the 40s).
