Sindarin has a far more beautiful, more "elvish" sound - one could perfectly imagine it being spoken somewhere north of the polar circle, I'd say.
Quenya however sounds more of a classical language, yet also a tad more archaic - Sindarin seems more "ripe", more lively (no wonder, Quenya hasn't been spoken in Middle Earth for two ages, and I don't suppose things change that much in Valinor), and to me, Quenya seems more like a language of the classical ancient cultures

Which shows the difference between the two languages fairly well (possibly since I know just a few words in Sindarin and less in Quenya), I'd say is the name of the King of the Sindar:
Elwe Singollo (Quenya)
Elu Thingol (Sindarin)
Which one sounds more elvish to you? Definetely the second one, I'd say.
