a cynical or at the very least "deep" sound of music? It seems that a song like this: https://www.youtube.com/watch?v=pIQMyfxX18w could never have been done in the 50s or early 60s.

There was plenty of that type of song in the 50's-60's, particularly with the popular jazz vocalists of the day. Rock vocals took over that role in the late 60's and jazz vocals fell out of favor in popular music, but the themes in your link were present in song long before 1970.
