I tried to find a labelled map of interstates but the best I can find is this, a brilliant map of the interstates if it was a rail system.

While I realize that in theory I-74 is one road, but I doubt the addition in North Carolina will connect to the original I-74 anytime in my lifetime.

I'm missing the ones in HI and the following: I-2, I-8, I-12, I-27, I-41, and I-49. I've been on I-41's road many times in the past but not since it got its designation earlier this year. I've been on the MO parts of I-49, but before its designation in 2012.

I 80 is about 4 miles north of my town and I take it almost every day of my life. I may have missed a few interstates since we took a trip to New Jersey when I was little that I'm not quite sure of which interstates we took.

For me it's 70 (as far east as Baltimore, as far west as Dayton), 71 (entire road within Ohio), 75 (TN-Mackinaw), 76E (Akron-Philly), 77 (Cleveland-WV), 79 (I-76 to Pittsburgh), 80 (Toledo to I-76), 90 (Toledo to I-190 in NY), and 95 which I forgot to vote for but only from Baltimore to Harford county.

They're on the coasts so they have less routes leading to them.

5 (probably once every few months or so)
8 (I think twice during San Diego area visits)
10 (the most frequent one. On average, probably once a week)
15 (multiple times for local areas but also for Las Vegas, and once for a Salt Lake City/Yellowstone trip)
17 (Phoenix to Flagstaff twice)
25 (a very quick ride through downtown Denver)
29 (two Kansas City visits)
35 (part of the two Kansas city visits)
40 (about 4 or 5 times, as part of Northern Arizona trips or Mojave Desert adventures)
66 (as part of a bus ride from Rosslyn, Virginia to the Dulles Int'l Airport)
70 (a Kansas City - Topeka day trip)
80 (at least once for a Sacramento - San Francisco ride, possibly a  second time in Salt Lake City)
84 (I forgot to check this one, and I can't change my votes, but this one should count as part of the SLC/Yellowstone Trip even though it shared a route with the 15.

Also, I missed going on the 19 but passed by through the 10/19 interchange.
