It could also be that the establishment, which tends to get extremely petulant whenever they don't get their way 100%, is attacking Cruz to punish him for attacking Rubio.

Dumb. They should've wanted Cruz to win Iowa, hope Trump totally implodes in NH/nationwide after being seen as a "loser", then rally behind Rubio to win NH.

But it's very unlikely Cruz would win NH even after winning IA. Trump will almost certainly win NH if he wins IA.
