It's all up to the GM, of course, but mine were as simple as possible, using one or two simple dice (and to go further, I used an online dice generator, to prevent bias on my behalf).

The key is to identify what to roll dice for, which is why my battles had different dice on each side because I assigned extra dice (starting with two) to a player depending on factors like terrain, generals, difference in numbers, and so forth. Giving extra dice or changing the numbers that favor each option gives you a very good range to simulate events with some sense of realism despite the chance factor.
