In the Battle of the Alamo, 50 soldiers left the fort when Mexican soldiers got inside of the compound, and they were cut off from the Church. Instead of fighting their way to the backup plan, they made for the San Antonio River, but met Mexican Calvary, and was killed before they could escape.

How would the war have changed if they made it out of the battle?

By 100 more deaths. If they had stayed, I expect Santa Anna looses another five hundred men or retreats with losses about equal to those IOTL+~250. If they had stayed, I think Texas could have feasibly defeated Santa Anna by just sending another hundred or so reinforcements to the Alamo.
