It's well known that Church rallied hard for the spot, and that Carter nearly picked him.

Would he have won the West Coast?

And would Church have been enough to keep more liberals on board in 1980?

With Church on the ticket, I see no reason why Carter would not still win.

I can't see much change in the electoral map.

Maybe Wisconsin flips without Mondale's Midwestern appeal, but other than that I doubt it changes much.

I think the more interesting thing would be if Church affects the Cabinet at all, and what happens in 1984.

Yes but Oregon, New Mexico, and California [courtesy of actually winning the Bay Area and getting into the 60s in the two reliable blue counties at the time] probably would've more than made the difference

At a bare minimum, Oregon flips to Carter.

That's 300 - 238 - +3 EVs for Carter.
