I am planning on continuing Spanish my first two years of college, but I kind of want to start learning a new language after that since it doesn't pose much of a challenge. I am allowed to have a third course of my choice. I would like to study French and Italian on my own, since they are my heritage languages. But I also wanted to have a language that would be a bit of a challenge to learn. Arabic, Chinese, and other Asian languages are out of the question in terms of difficulty and effort. I was thinking of Russian or something to study, but i'm not entirely sure. Any thoughts?

Deutsch natuerlich. (aka German)

Makes any old-timey English literature you'll be forced to read much easier.

Seconded.  If difficulty/time is a big concern, Russian is probably too hard, even if it's easier than the more useful Arabic/Chinese. 

Maybe Portuguese; it's the only other romance language with millions of speakers.

Maybe you're a lot smarter than I am, but I don't think learning three languages at the same time, on top of maintaining your level in another foreign language, is a manageable strategy. I'd say you focus on the language that matters most to you (Italian!!! it's the most beautiful language in the world).

Chinese! I was gonna say French cause it's the most beautiful language, but I guess you want to do that on your own.

I can tell you from experience that "difficult" languages often earn an unfair reputation. I found Mandarin easier than French. The beginning is the hardest part, since you have to adjust to a completely different system (tones, characters, etc.) However, I found it to be pretty smooth sailing after the first two months or so.

My suggestion would be to learn the language which you will have the most personal investment in. Any language will have its share of difficulties, and your own motivation is what will help you power through those difficulties.

Whichever you choose, I strongly recommend using Duolingo to get some backhand knowledge before you declare a language to study.  I started learning Norwegian last summer to see where my language skills were at (which I would later find out is a lot less useful than I thought because most native Norwegians know English, but that's another topic) and Duolingo helped me pick up certain things fairly quickly.  If you don't start 'getting' it as quickly as you would like, take on another language.

Have some fun with it.
