Obviously there's no hard data so here's a guess starting with the Northeast and Midwest regions.

ME, NH, VT - French/French Canadian
MA - Irish
RI - Italian
CT - Italian
NY - Italian
NJ - Italian
PA - Irish
OH - German (?)
MI - Polish
IN - German
IL - Polish (maybe Irish)
WI - German
MN - German
IA - German
MO - German
ND - German
SD - German
NE - German
KS - German

I think Illinois is either Irish or German.  There are a lot of Poles in certain parts of the Chicago metro, but you can find Irish and Germans everywhere in the state.  And most of the heavily polish ethnic areas in Chicago are also heavily Irish.

I doubt it.  German ancestry in PA is mostly from the colonial era and colonial era Germans were virtually all Protestant.  Italians would be the second largest ancestry group among PA Catholics.

Data on ancestry and religion is scattered and hard to come by.  From what I've read from various sources, maybe 20% of those of German ancestry are Catholic.  Irish are something like one third Catholic, but with a big regional variation.  Irish in the South are overwhelmingly Protestant, Irish in New York and New England are predominantly Catholic.

French/French Canadian ancestry is more reported than Irish ancestry.  Is there reason to believe that Irish Vermonters retain Catholicism at a higher rate?

NH, the most French Canadian state in 1930, may be more Irish Catholic though now because of the growth of Boston exurbia.

Ohio is definitely German. Sure Cleveland has very few Germans, but the majority of the Catholics in pretty much the entire rest of the state are German.

Wisconsin is also definitely German but that's extraordinarily obvious.

I've lived here for 30 of the last 35 years and if the Italians aren't more numerous than the French, they are certainly more noticeable.

Not sure if you're referring to Mississippi or New Orleans. But if it's the latter, I can say that the Italians make themselves much more known and open about their heritage than your average coonass. But if you just look at an average surname on any of the church registries, you're going to think you took a wrong turn and ended up in Marseilles.
