What if Jimmy Carter ran his 1976 campaign as a segregationist southern democrat and hard-line conservative with his running mate being George Wallace instead of Mondale?

He wouldn't have won the nomination, and wouldn't have a chance in the GE if he did.

If Carter loses the nomination then and say Scoop Jackson wins the nomination (possibly with a more moderate democrat as a running mate) what does that mean for the GE?

EDIT: Perhaps Carter/Wallace also run a third-party ticket in the south, like how Wallace himself ran in 1968?

Unsure about MA but there's probably enough institutional Democratic strength there for Carter to just barely carry the state. Eugene McCarthy hits double digits in Minnesota and in parts of the northeast.
