Yes, as they might abuse their embassy and use it to shelter rapists. If they prove themselves unlikely to do so we can re-establish relations and give them their embassy back.

You do realize that if we cut off ties with all countries that engage in open efforts to interfere with our elections, that will include many countries, most notably including Israel. Somehow, I doubt you truly want that to be the standard we follow. Even if I'm wrong and you do think we should cut off ties with all countries that engage in efforts to influence our elections, I think such an iron clad rule would be stupid, even if limited to those countries that have engaged in criminally covert efforts, such as Russia.

I can't speak to what should be done, but I can pretty much guarantee what has been done and will be done is that any time there is a mid-level to low-level discussion between the US, UK, or Sweden and Ecuador on something like the terms of some trade deal or some statement at the UN, the negotiators will milk the Assange situation for all its worth. Anytime the Ecuadorians want some concession from the other side, they'll just say "You want to give us Assange? No? Well, sucks to be you then." It's not a super visible rebuttal, but it gets the point across.

China is pretty awful yes, but they haven't done anything anywhere near as terrible as harboring Julian Assange.

What consequences should be imposed for harboring Assange? Something on that level can not be unpunished.

I'm sure he regrets not listening to Hillary's suggestion of droning Assange now.
