I'll be boring and say Greek because I grew up on it, but there's a ton of great stories in Norse mythology too (I'm not familiar enough with Egyptian mythology).

I admit, I'm rather rusty on the topic (I actually voted Norse for this reason, but with all the other Western mythologies here besides this...I just had to be a troll) and technically speaking there were lots of little mythos within. But usually, it's Irish mythology that is referenced when people say Celtic.

I know much of what we think about fairies/faeries comes from them, I know much of what we think makes a druid comes from them, and of course who can forget about leprechauns?

That tipped me in favor of the Norse.

I think that technically, Odin's grandparents came from the Cow's saliva when she spit onto the ice and salt.

Let's just say that if Greek myths are defined mostly by tragedies, the Norse myths are defined mostly by comedies. Thor also had to go cross-dressing to trick a giant into marrying him. And Loki transformed himself into a female horse, and got pregnant, to help out the gods on some task. The Norse myths were basically their equivalent of Family Guy (with Loki = Stewie).

Egyptian mythology, especially in the later Roman period.  Having read Apuleius' 'Golden Ass', I always had a soft spot for the cult of Isis.

My mom used to read be Greek myths when I was a kid. It took me years to realize how brutal this thing was. Ah, the innocence.
