What if Ted Cruz and Bernie Sanders had won their respective MO primaries in 2016? (Each lost by just a few hundred to a thousand votes).

If Sanders had won by an equally slim margin as Clinton did, absolutely nothing would have changed.

Cruz winning in Missouri, on the other hand, would have made things much more interesting, assuming he had won by the same delegate margin as Trump did, which was 37 to 15.  It's hard to say exactly how it would have impacted either his or Trump's eventual performances in the states that came afterward, but it would have at least made a contested convention seem much more inevitable at that point in time.  If Trump had done just as well in the Acela primary, and in Indiana, then he probably would have won anyway.
