A theory is that LBJ benefited in 1964 because the American people did not want to elect a new President within an year of his assuming office. Obviously, it's different if a President is removed from office due to his own mistakes rather than assassinated by a crazy communist, although it is worth noting Ford came pretty close to winning a full term two years after he became President following Nixon's impeachment.

If Donald Trump were removed from office, could Mike Pence benefit from American voters wanting stability and opting against having a new President? Or would more voters want to dump anything to do with the Trump administration?

The stain of impeachment would be enough for the Democrats to oust the GOP in 2020, despite the incumbancy advantage; as Mike Pence days in Indiana wasn't without controversy either.

Yes, it would matter in a sense. A President Pence would be seen as a sane conservative, compared to the irascible working class appeal of Trump. He would benefit from the power of incumbency. He would raise tons of money in order to run for president in 2020, and he would probably retain some of Trump's white working class voters in the Midwest.

However, he would have to appeal to Latino and black voters, if he wants to do better than Trump in the popular vote.
