I will admit this is a bit trickier, but my thinking would be as follows but I will admit you could easily argue differently.  I will admit the first two are pretty straight forward, after that it depends on definition and what angle you look at it.  US, UK, and France are fairly polarized, Italy and Japan don't neatly follow the left/right spectrum, Germany is more consensus, while Canada falls in between the consensus vs. polarized.

With the exception of immigration, on what issues is Japan conservative? it has a pretty socialistic economy, it's a very open society when it comes to homosexuality and other social freedom issues, guns are illegal, abortion is legal in every term.

While not overly socially conservative, it is one of two G7 countries that still hasn't legalized gay marriage.  When it comes to welfare state size, it's smaller than most asides from perhaps Canada and US while on levels of state ownership only UK and US are similar or smaller.  Utilities and railways are privatized in Japan unlike in some others.  Also taxation as a portion of GDP is the 2nd lowest in the G7 only behind the US although their top marginal tax rate is the highest and corporate tax rate second highest so that is why I put it as second most conservative.  While the US is without question the most conservative I will admit the rankings of the other six are pretty subjective.

My bad I meant most conservative, I will correct this.  US is definitely the most conservative.

Not sure I would put France as more conservative than Canada.  Socially that is definitely true, but economically they have a pretty bloated state and government intervention in the economy tends to be much more than Canada.
