Probably 2003, but Office 2016 is the best. That said, I don't have it because I'm not paying $140 for it. So I just use LibreOffice/OpenOffice/Google Docs instead.

I have Office 2010 on my computer (but usually use Google Docs and the like), which will go down with my Windows 7 desktop on January 14th, 2020. I'm not a fan of Office 16's (and Windows 10's) flat design, it looks ugly and low-effort to me.

And I don't just prefer older versions for Office either.  Every computer I have is modified or customized to use "classic" themes so that they all look like I'm running Windows 95.

Which is intentional.  That is when GUIs for a traditional set up (i.e., using a keyboard and mouse) peaked in terms of functionality and ease of use.  Basically every design feature (except for a few) since then have been unnecessary and just adds clutter.

Tablets are a different story, but I don't use them very often.

I use Office 2011 simply because I've no real need to upgrade at this point - 2016 looks good but I don't need any of the new stuff in it.
