Could this seat be competitive in 2008?  It seems like it goes slightly Dem in presidential years, but with the right candidate and the open seat factor, could this seat reasonably swing?

I doubt it.  This area and CO-2 are trending Democratic - Gore won CO-2 52%-43% in 2000 and Kerry won it 58%-41% in 2004.  When Udall vacates it, it will probably not be contested at all.
