Germany, Greece and Russia excluded as everybody would automatically pick them due to the name recognition/stability.

Well, Austria, but I'm pretty sure it's wealthy enough to be excluded from Eastern Europe. Possibly the Czech Republic. Seems to be best put together (ie, not dominated by nutjobs, dictators, semi-dictators, or religious strife. Hungary doesn't seem objectionable either. Or Slovenia.

I just listed all the countries from the CIA World Factbook under Central, Eastern, Southeastern.

Central Europe: Austria, Czech Republic, Germany, Hungary, Poland, Slovakia and Slovenia
Eastern Europe: Belarus, Estonia, Latvia, Lithuania, and Ukraine
Southeastern Europe: Albania, Bulgaria, Bosnia and Herzegovina, Croatia, Serbia, Macedonia, Romania, Montenegro, Kosovo and part of Turkey

Austria is not Eastern Europe, neither is Germany, Greece is usually not considered it (European classifications go beyond geography) and I doubt most people here would actually choose Russia.

Ugh, Eastern Europe.

I'd choose either Poland (Roman Catholics) or Croatia but I leave towards the latter. I've always been interested in Croatia. Plus, it's close to Western Europe/Italy.

Austria can be considered in between of West and East. Historically it has been Center-East, in the past 90 years it has been Center-West. Austria in German (Österreich) itself means "Eastern Realm".

Rural Romania isn´t bad as well ...

One of the Baltic states or Poland.  It's been a few years since I've had a good reason to hate Russia, living in those places would put that right back on the front burner.
