Mine would be U.S. Ambassador to Italy. Runner up would be U.S. Ambassador to the Vatican.

Sec. of Defense would be nice, but I would need a few years to ready my person for the job. 

I'd currently take the job of:Interior, Ag, Commerce, Labor, Health and Human Services, HUD, Transportation, Energy, Education, Veteran's Affairs and Homeland Security.....and then get busy shutting them down.

DoD of DoJ for the NA treaties, and Dep. of Treasury for the interstates (or just hand the whole thing over to the various states).
