Since it's the season...

My pick is "Ding Dong Merrily On High."

That's a good one, but in my opinion, "O Holy Night" pips it at the post. Also love "Angels We Have Heard on High," "God Rest Ye Merry, Gentleman," and, heck, I love quite a few! I love this time of year! People seem happier, I love singing carols by candlelight, I love Christmas!

Wait, it's December?

Oh, no, it's still November. So why the thread?

Carol as in a song? I think carols and songs are different but whatever the case, my favorite Christmas tune is "Do you hear what I hear?" by Whitney Houston.

I'm a big fan of "Please Daddy, Don't get Drunk this Christmas" by Alan Jackson.

Carol of the Bells.

It's not something I'd consider a carol, but I like John Lennon's Happy Xmas.

I have a different one every Christmas.  I'll get back you in a few weeks.

The song that's playing in my head right now is "Mamacita...donde esta Santa Claus?..."  (Excuse my grasp of Spanish and the fact that I don't know the title)

Another one I like is "Gloooooooooooooooooooria...in excelsis deoooo..."  Whatever that one's called (I think its "Gloria")

*strict imposer of the No-Christmas-Junk until December rule*

I'm a "No Christmas until after Thanksgiving."  Thanksgiving's over.

I'm a "Christmas-Year-Round" kind-of-guy.  I love Christmas and you'll hear me singing Christmas Carols around Easter, in the dog days of summer, as well as at Christmas time.  I have been known to put up my Christmas tree in October (I didn't this year, though, but did on November 22).

So, naturally, I love all Christmas Carols, but my three most favorite are "O Holy Night", "Silent Night", and "O Little Town of Bethlehem".  Of the secular Christmas tunes, I like "The Christmas Song (Chestnuts roasting on an open fire)" by Nat King Cole, "White Christmas" by Irving Berlin or Bing Crosby, and the old classic "Rudolph, the Red-Nosed Reindeer" by Burl Ives.

PS: I know that Messiah isn't Carol music, but I'd like to throw it out there.  I'm listening to "O Thou That Tellest Good Tidings To Zion."

I don't have a favorite, since it depends on my mood.  I like:

Boney M.'s version of "Mary's Boy Child/Oh My Lord"
Lou Monte's "Dominick the Donkey"
Burl Ives' "A Holly Jolly Christmas"
Leroy Anderson's "Sleigh Ride" <--- A MUST!
Mannheim Steamroller's "Little Drummer Boy"
Trans Siberian Orchestra's "Christmas Eve/Sarajevo 12/24"

And so many more.
