     Yes, it's quite annoying. I've been working hard to stop using hypercorrecting phrases like that.

We aren't, and even if we were, there would be no need for hypercorrection (which is, mind you, a mistake).

That's at least grammatically correct, albeit atrocious style.

Yes.  It's like people were never taught the simple rule to say the sentence without the "you and" and see what fits.

You and me went to the store = bad
You and I went to the store = good
The store manager helped you and I find the Diet Pepsi. = bad
The store manager helped you and me find the Diet Pepsi. = good
