I don't think an LGBT VP would win over many undecided voters, as it would probably be seen as pandering to the base. Neither Polis nor Baldwin is superior policy-wise to some of the more frequently suggested folks, like Julian Castro or even Tim Kaine, and I think most people would see it as a rather nakedly political move. In any case it would be meant to gin up the base, and even then I don't think that a lot of people would vote for Clinton/Polis that wouldn't have voted for Clinton/Kaine or Clinton/Castro anyway. Promising to nominate an LGBT person to the Clinton cabinet, perhaps, is another story.
