An income equality amendment would literally abolish capitalism. You'd have to pay everybody the same, like how in Cuba the government dictates salaries.
and people constantly get around that.
An income equality amendment wouldn't abolish capitalism in any more sense than China has abolished capitalism. Instead it would abolish the Constitution as a document with any power to enforce the rights it describes. We'd be like all those countries with lofty ideals in their constitutions that are completely ignored unless they are convenient.
