What are your favorites when it comes to poor man's food?

I'd say chili and picante chicken are my favorite "spicy" ones with pork being my favorite non-spicy flavor.

Beef is too soy-ey and chicken too plain.  Pork gets a nice soy/umami and pork flavor that is just right.

Akamaru Chashu with extra pork belly from Ippudo in the East Village.  I don't know if that's poor man's food though, it's like $20 for a bowl. 

When it comes to instant noodles (since that's what you mean, not ramen), the flavor is pretty irrelevant because I dump in a ton of sriracha.

I prefer chicken as the base. Then I'll add about half a table spoon of sriracha, a few drops of fish sauce, and a small bit of soy sauce.

Then if I have the following I'll add:
Chopped green onion
Corn
shredded chicken
any left over dish involving rice

Yeah... maruchan instant ramen compared to real ramen... is like chef boyardee canned spaghettios compared to handmade ravioli made by an expert chef/grandma from italy.

Ooh, I like Ippudo, I've been there.. We have a great place in the neighborhood though, Jin; their speciality, the tonkatsu, is absolutely superb. Just the right amount of tart and salty. It seems to have become very popular all of a sudden, even though it's been open for a few years now. I must have been there 3 times or so.

It's very unpretentious food.

Picante chicken, pork, and creamy chicken. They're pretty much the only ones I ever eat. I've never heard of the flavours with mushroom or lime.

I don't eat them the same way most people do. I boil the noodles, drain the water, and then add the seasoning. I also like to mix in a bit of shredded cheese to the chicken varieties.

I concur with your choices and analysis of chicken and beef, Snowguy.

I still love ramen 20 years post-law school. If I could handle the carbs I'd eat them any afternoon I'm home.

Least favorite flovors, ftr, creamy chicken and chicken mushroom.

The fancy Asian grocery store instant noodles frankly are only slightly better than Ramen bradn, if that. It's all basically dried noodles with MSG -packed boullion powder of varying flavors.

I don't really like instant noodles. They're too salty.

Simfan is correct that Jin is great though. Best broth in the city IMO, though there are places with better noodles.

Sometimes I'll boil the egg yoke just enough to get the outside cooked and then place in with the noodles in the bowl with a little broth. Then mix it in.

Sometimes I crack an egg in it about halfway through cooking, give it a stir and let it cook in there.  Usually I don't.  Usually I put about five little carrots, a few leaves of cabbage, cayenne pepper, and some sliced jalapeņos or thai chilis.  Also, if we have some leftover pork--and we almost always do--then I slice that thin and throw it in there.  I don't use the Raman noodles often, though.  We usually buy Mama's brand "artificial pork flavour" noodles.  I have those about twice per week, on average, for lunch.  We also buy the orange Korean noodles.  We also have lots of different kinds of rice noodles, flour noodles, mung bean noodles, and such in our house.  We're very much into noodles.
