Let's say 1948 went as many at the time thought it would and Dewey wins. What does a Dewey presidency look like? Domestic Policies? What happens as far as the Cold War under a President Dewey?

Probably not much change from RL. Dewey still sends the U.S. into Korea and upholds the entire New Deal. He might make some actions to promote civil rights, but nothing decisive. Dewey is narrowly reelected in 1952, and Earl Warren or whoever the Republicans nominate in 1956 wins after Dewey's second term. In 1948, there was very little difference between Truman and Dewey on the issues, so that is why not much would change.

The Korean War could have been much worse under a hard line Dewey Administration.
