Leonardo is a good answer. My religious beliefs about Jesus' status as 'dead or alive' preclude me from listing Him (and I'd be honestly a little afraid of trifling with Him), but Shakyamuni Buddha would be amazingly interesting, as would Kobo Daishi and Ryokan Taigu. Therese of Lisieux, Julian of Norwich, Hildegard of Bingen. But if I could only choose one I think it would have to be the early-to-mid-twentieth-century popular Japanese novel and magazine writer Yoshiya Nobuko, for the purely selfish reason that I'm trying to do academic work on her and struggling a bit on how to start.
