For South Dakota, I'm surprised anyone has gone there as they don't even have those high paying gas jobs like their northern neighbors. PRI has a good article on Bhutanese farming rice in Vermont.

The Chinese are probably settling in the more suburban parts, I guess.

The Bhutanese are refugees. The government of Bhutan, despite all the good press, has expelled most of the ethnically Nepalese population, and they've mostly been languishing in refugee camps in Nepal since.

Also VT and SD are major destinations for refugee resettlement and aren't very diverse otherwise.

I used to live near Louisville and there were a decent amount of them there.  The city also has a fantastic Cuban restaurant.
