Someone in Utah who just wanted to vote for anti-establishment in the primary, and who thought the most anti establishment thing to do would be to vote McMullin in hopes of him bringing the election to the House, leading to chaos?

Liberal Republican who was disaffected by all republican candidates and voted sanders in the Democratic Primary. Not wanted to vote for trump, the republican votes for McMullin

A Republican who wanted to soften up Hillary for the GOP nominee, then saw who the GOP nominee was.

OR: A moderate GOP Vermonter. Bernie routinely wins with like 70% of the vote in VT, probably winning some moderate Republicans on his way.

Bernie or Buster in Utah who wanted a third party candidate to win a state (to stick it to the establishment or whatever) so voted for the third party candidate with the highest chance of winning Utah.

Or just a Utah Democrat who thought that McMullin had a better chance of winning Utah than Clinton, so voted for McMullin.

Maybe a populist democrat who thought they would be helping out Hillary more by voting for McMullian who might have had a better chance at winning the state in opposition to Trump.
