What if a chosen elector dies between election day in early November and the voting of the electoral college in December? Is there a mechanism to replace them during that time span? Ususally that wouldn't have a larger impact, but that becomes interesting if the election ends 270 versus 268 electoral votes.

They can be replaced with alternates if they're dead or unable to vote. The process varies by state.

In Michigan one voters for "Electors for (whoever)", and not directly for the President.
