Personally, I quite like Taft, Carter, and Bush Sr. I like the Adamses too...
If I had to choose just one I'd say Carter.

EDIT: Whoops, forgot Coolidge served the final year of Hardings term so he technically wasn't a one term president.

I'd say George H. W. Bush gave the nation its most successful one-term presidency, so he'd be my choice for the best one-term president, let alone one of the most underrated presidents, b/c of the end of the Cold War, German unification & the collapse of the Soviet Union, the Gulf War, the ADA, the 1990 Clean Air Act, the FIRREA law, NAFTA, etc. Yeah, the toughest one-term competitor to Bush is James K. Polk, who achieved all 4 of his goals (gaining the Oregon Territory & the Pacific Coast, establishing an independent Treasury, & lowering tariffs), but Polk's acquisitions left the country w/ the problem that was slavery in the territories (a problem which took a civil war to solve).

My favorite, though, would have to be Gerald Ford, b/c he was courageously motivated solely by the state of the country's health at home & around the world.

Polk did accomplish everything he wanted to...there's just the fact that he started the Mexican-American war because southern landowners wanted to expand slavery west.
it gave the democrats one of the most liberal states in the union thought.

My favorites would have to be Polk, Bush, and Ford. Bush, in particular, I feel kinda got hurt by being at the wrong place at the wrong time with the party exhaustion and the economy being in trouble and him being a foreign policy pres.
