What if let say Lyndon Johnson never had that major heart attack in the 50s and that is the only thing that changes and the rest goes the same. Becomes Vice President then President after JFK's  assassination.

What if because of this butterfly Johnson doesn't run for a full term what does the 1964 Election look like?

Humphrey still wins in a massive landslide, but maybe he does a little bit worse than Johnson.

I can see Bobby running  and winning, just not by the same margin Johnson did.

Just a minor difference, Goldwater still goes down in flames.

✓ Senator Hubert Humphrey (D-MN)/Attorney General Robert F. Kennedy (D-MA): 465 EVs.; 58.1%
Senator Barry Goldwater (R-AZ)/Representative William Miller (R-NY): 73 EVs.; 40.3%

Johnson won Wyoming by over 13%, I don't see how Humphrey loses it here, especially while still winning Idaho.

If Johnson weren't picked, Symington would've been JFK's pick instead. No way would he not run in 1964 after such high approvals and what happened to JFK. And no way would whoever just became President in 1963 not run for proper election with everything on the table.

I suspect to shore up the hawk vote, Symington would pick Scoop Jackson, who also doubles as a strong civil rights proponent.

Why would Johnson being in better health than original history lead him to turn down a full term as president?

But yes, Humphrey or RFK (or any Democrat, really) would demolish Goldwater.
