It would have depended on how the peaceful exit of Vietnam would of happened. Democrats drew up the War Powers Resolution and would America would have withdrawn anyways, but it would have had to be peaceful and orderly. Humphrey, would have definately been challenged by RFK should he have survived and he could have lost the primary to RFK. Secular groups weren't happen with the status quo, even the people assciated with Johnson administration when it came to Nam. But, if RFK challenged Humphrey in 1972, Humphrey obviously wouldn't have won reelection, but RFK would have, however, a GOP congress could have been installed a lot quicker, on the Senate side than 1980.

Barring some kind of recession, why wouldn't he? Most of the bragging points Nixon used to win by such a substantial margin were things Humphrey likely would have done, but with more gusto. With enough successes of The Great Society, he might even get chunks of The South [Methinks the set-up Bill Clinton won on sounds about right] back on the same sort of coalition Carter used. (Definitely would if the GOP nominated Rocky)

He would not have been a great president, but no watergate, the GOP would probably win in 1972, after 12 years of Democrats in the white house.

If Humphrey managed to end the Vietnam War & if the economy was still strong, then he'd still be favored to win re-election in 1972.

Later on, though, the GOP would have a better shot in 1976. There would've been 4 terms w/ a Democrat in the White House & the perceived need for change would be more pronounced, w/ whomever the GOP nominates then (Rockefeller? Reagan? Connally? etc. etc.) likely being able to win against VP Muskie as the Democratic nominee.

He'll probably win in 1972. Something like 2012. A victory, but not a landslide. I personally see Reagan as as Humphrey's opponent. Keep in mind Humphrey was diagnosed with bladder cancer in 1969 OTL. He died in 1978. So it's likely Humphrey dies in office. Maybe in '74 or '75.
