I find it interesting just how difficult the state is to poll, but I am interested in exactly why this state is difficult to poll.

Contacting a statistical sample of 700,000 people strewn across almost as many square miles of desolate void is too much of a logistical nightmare to be worth the trouble and expense.

I don't think Alaska is as difficult to poll in the general election as conventional wisdom dictates. Most Alaskans live in the state's largest cities/boroughs. And all residents who aren't from Outside have the same area code. Distance really doesn't matter. And I don't think residents of Utqiagvik (formerly known as Barrow) don't have phones at home.

Perhaps the problem, to the extent it exists, is lack of practice and perhaps exit poll data for weighting.

This, but also the fact that Alaska tends to have three-way races. A lot of them.
