Uber drivers control the means of production and supply their own capital in the form of the cars they own. This puts them in a better economic position than a traditional worker. The idea that the economy at large should go "gig," or that lack of protections for collective bargaining, working conditions, wages, and safety are good for labor and capital alike, is a neoliberal fantasy.

Uber is broke, its executives are covering up sexual assault, and it is hated by a great deal of the public.

Uber is losing money, takes advantage of its employees, refuses to follow local laws, and pretends it's the best thing in town.

Yep, pretty much spot-on.

Labor union cabs, however, get the job done, abide by the law, provide reliable service, and while they might not be there the instant you call them, you don't have to worry about being sexually harassed by your driver with no safety recourse and you definitely know your driver is getting paid appropriately and the city isn't getting stiffed.

Cabs > Uber.  Every time.

So, yeah, go for this analogy. It fits.

It seems to me that Uber is like a smaller scale version of the individual franchise model that chains like Jimmy John's uses. You pay a franchise fee and put money down on a loan (from corporate), and get to call yourself the owner and boss. In reality Jimmy John's tells you what to do and you're in debt to them. You just paid a bunch of money to be a manager of one of their stores, and they don't even have to pay you.

It's the illusion of ownership and the illusion of independence. In reality you're providing the capital for their business, which they control, and take on risk that no employee should ever need to assume just to have a job.

My hot take is that Uber's business model is fundamentally about as sustainable as MoviePass, it's just not as obvious offhand so they can keep getting investment money they keep burning through.

You see, amongst Hipster Capitalists*, short term profits are not the chief objective. Rather, long term sustainability built on a very small profit margin is the foremost goal.
