Has anyone been keeping track of this?  I know several different press agencies have made estimates but do any websites have a list of the superdelegates that have come out and made endorsements?

Also, who are the superdelegates?  I know all Democratic governors and members of Congress are superdelegates as are former presidents and vice presidents.  Who else makes the cut?

Various important DNC people, past and present DNC chairs, past Majority Leaders and Speakers. People selected by the state committees. I may have missed some.

I think you got them all. It is rather silly, although the judgment of elected officials should be correct.

That is a great link (I've been using that source myself).

The main problem with keeping track of superdelegates is that there is no good publicly available list of DNC members.  The link given does have its list of DNC members...though it tends to contradict other sources on occasion [in terms of "numbers of superdelegates" per state].
